Christmas Eve's Chocolate Mug Cake

This year I'm spending my Christmas eve little different way than how I would be spending it in Finland, in other words I'm not celebrating Christmas this year at all.

Couple months ago I found amazing little book I wanted to buy and I actually did buy it, but after that I never had any time to try the little recipes of the book. The name of the book is Mug Cakes and it is full of cake recipes that you are suppose to bake in microwave and in a mug.
I found out that the recipes are so easy and quick to do! I will definitely do them another time!
The only thing I didn't like was the mess afterwards, but I can't blame anyone else than me

Also if you can see there is the recipe for this little cute mug cake on one of the photos, but in case it is not so easy to read for all, I will also write it at the end of the post







1 Slice of butter (1cm cube or 30g) 
1 egg 
4 tablespoons of very fine sugar 
6 table spoons of all purpose flour 
3 tablespoons of cocoa powder 
1/2 teaspoons of baking powder 
1 tablespoon of single cream
2 tablespoons of chocolate chips 
2 tablespoons of crunchy hazelnut spread

So first step is to melt the butter in the microwave about 20 seconds. 
Then in the mug beat the egg and add all the dry ingredients, mix well before you add the next ingredient. In the end mix well together with the butter. Bake in the microwave for 5 minutes in 800W

Autumn Colors

My friend stayed over night here last night. We wanted to find something to do and we decided to bake a carrot cake! We had all the other ingredients expect sugar, so we had to go to buy it. We went to one shopping mall called Sello. We also did some other shopping too, clothes, and other outfits :) 


Below this text there's a picture of the carrot cake. I think it looks pretty delicious, but this time, the taste wasn't so good. Almonds on the decoration tasted a bit like plastic. Let's see who wants to eat it : D




CARROT CAKE

4 eggs
250 g of sugar
2 dl of oil
300 g of flour
3/4 ts of salt
3 ts of baking powder
2 ts of cinnamon
400 g of grated carrots
55 g of almond crumbs

Frosting
180 g of soft butter
250 g powdered sugar
200 g of Philadelphia


Whisk eggs and sugar until fluffy and add oil. Mix all the dry ingredients, flour, salt, baking powder and cinnamon. Pour to egg mixture and mix well. Add grated carrots to dough and mix smooth with mixer. Grease and flour the casserole. Pour the dough to the casserole and fry about 45mins in 180 Degrees (or as long as necessary).  The cake should rise high in a oven. Let the cake cool down before you move it to a plate.

While the cake is in the oven you can prepare the frosting. Whisk butter and powdered sugar, add Philadelphia and mix it smooth.

After the cake has cool down, pervade the frosting with a spatula on the cake and sides of it.  Decorate with almond crumbs

Also I was working on my nails today. I wanted to use some Autumn colors, so I ended up to orange with glitter. The nail polish today was O.P.I Goldilocks Rock. First I applied nail hardener and then one level of base coat and after that I applied Goldilocks Rocks nail polish. I finish the nails with top coat.

Cheese Cake

Today I woke up early and i drove to a market and bought some ingredients for a cheese cake.
Well, it could have been better, but I'm happy about it, it tastes ok :) I changed some ingredients of the recipe, so it failed a bit. And the cake didn't look so delicious : D
Below the picture is the recipe :)



100g    Voita
250g    Digestivekeksejä
5kpl     Liivatelehteä
600g    Tuorejuustoa
3,5dl    Kermaa
3,0dl    Tomusokeria
 1kpl  Verkkomelonia
1kpl     Limemehua

Pohja:

Sekoita kulhossa voi ja digestivekeksimurut. Sen jälkeen keksimuruseos laitetaan kakkuvuokaan, johon on laitettu leivinpaperi pohjalle ja painetaan tiiviisti tasaiseksi pohjaksi. Laita vuoka jääkaappiin jähmettymään

Täyte:

Laita liivatelehdet kylmään veteen n. 5 minuutiksi. Sekoita tuorejuusto ja tomusokeri isossa kulhossa tasaiseksi seokseksi. Vaahdota kuohukerma kermavaahdoksi ja lisää se sekoittamalla tuorejuusto seokseen

Purista limemehu ja soseuta meloni kattilaan ja anna niiden lämmetä. Kun seos on lämmennyt lisää liivatelehdet kuumaan seokseen ja sen jälkeen sekoita se tuorejuustomassan kanssa yhteen. Tämän jälkeen kaada seos kakkuvuokaan, kovettuneen pohjan päälle ja laita se takaisin jääkaappiin hyytymään.

Ohjetta voi muokata makunsa mukaan, jos ei pidä verkkomelonista, sen voi korvata vaikka passionhedelmällä. Kannattaa kuitenkin miettiä onko hedelmässä hedelmämehua enemmän tai vähemmän ja miettiä sitten liivatteen määrää


Now i had time to translate the recipe in English too, so here it is :) 

100g      butter
250g      digestive cookies
5         gelatine sheets
600g      philadephia cheese
3,5dl       cream
3,0dl        powered sugar
1        melon
1         lime juice

Bottom: 

Smash cookies to small crumbs and mix it with a soft butter in a bowl. Take a cake casserole where are you gonna build the cake and cut right size of greaseproof paper on the bottom.  After that add cookie crumb-butter mixture to the cake casserole and press it tightly. Put the casserole to frigde to set up. 

Filling: 

Take a small bowl and fill it with cold water and add gelatine sheets in the water for 5 minutes.  Mix philadelphia and powered sugar and whip the mixture smooth. Now whip a cream and add it to philadelphia mixture and mix it. 

Press the lime juice to a pot. Peel, slice and squash the melon. Then add it to pot with lime juice and let it boil for a second. When the mixture has boiled add the gelatine sheets. (squeeze additional water off) And now mix the melon-lime mixture with philadephia and pour the mixture to the casserole. Put it back to fridge for several hours to congeal

If you want you can change the recipe, if you don't like melon. You can use passion fruit for example, or fruits you prefer. But remember you probbaly have to add more or little less gelatine, if the fruit has less juice or more
